Potato Skins are one of our favorite party foods, so easy to make and everybody loves them. Crispy on the outside, filled with melted cheese and bacon, what could be better?

Potato Skins originally gained popularity as the quintessential bar food but in our family, it is more of a party food/game day appetizer. Big fans of all things potato we make them quite a bit. We love the crispy outside and the melty cheese inside (and also how easy they are to make.). This is our version of this classic recipe, we hope you enjoy them as much as we do!

How to Prepare the Potatoes

Step 1: Scrub and wash your potatoes and then poke holes in them with a fork to keep them from exploding in the oven.
Step 2: Bake the potatoes in a preheated 400-degree oven for 60 minutes or until the potatoes skins are crisp on the outside and the potato itself is soft to the touch on the inside.

Step 3: When the potatoes are baked, remove them from the oven and cut them into halves, lengthwise.
SteScoop out the insides of the potatoes leaving 1/4″ of the potato on the skin. (You can use the insides to make Mashed Potatoes!)
Step 4: Turn over the potato skins on a prepared baking sheet and lightly cover the skins with olive oil and then sprinkle with garlic salt. Return the skins to a 450-degree oven and cook for 10 minutes to crisp up the skins.
Step 5: Sprinkle the potato skins with grated cheese and already cooked bacon pieces.
Step 6: Return to the oven for 2-3 minutes or until the cheese is melted. Sprinkle with chopped green onion and serve immediately.

  • 6 small to medium Russet Potatoes
  • 1 tablespoon Olive Oil
  • 2 teaspoons Garlic Salt
  • 2 cups Cheddar Cheese (grated)
  • 6 slices of Bacon (cooked and chopped)
  • 2 spears of Green Onions (chopped)
  • Sour Cream (optional to use as a garnish)

Instructions
