Our Sausage Breakfast Casserole combines eggs, sausage, cheese and biscuits into one yummy and easy to make breakfast casserole that is perfect for both special occasions and a random Sunday morning.

For 360 days of the year we are a catch as catch can kind of a family where breakfast is concerned but that all changes on Holiday mornings.  Christmas, Easter, Birthdays and even on Thanksgiving we like to have a special family breakfast with something from the two most popular food groups – Sweet and Savory. This Sausage Breakfast Casserole is perfect for the Savory option. All you need are Biscuits, Cheese, Eggs, Breakfast Sausage and a baking dish. Easy Peasy. And your family will love it. What could be better?

Ingredients You will Need

  • Refrigerated Biscuits: The base of this casserole are store-bought refrigerated biscuits.  We like the Pillsbury Buttermilk Southern Homestyle version but choose your favorite.  If you get the Grands size you will need approximately 1 1/2 cans to fill the 9×13″ baking dish.  You will need the full two rolls of the regular size biscuits.  
  • Eggs:   You will need eight Large Size eggs for this recipe.
  • Breakfast Sausage: Your favorite sausage, browned in a skillet.  We used a Breakfast Sausage.
  • Milk: to mix with the eggs.
  • Cheese: We used Cheddar Cheese but Cheddar Jack would taste good too.
  • Salt & Pepper: to taste.

How to Make a Sausage, Egg and Biscuit Casserole

  1. Before you begin to assemble the casserole, grate your cheese and brown the sausage (this can be done the night before if you are going to be short of time in the morning).  When you are ready to bake the breakfast casserole, spray a 9×13″ pan with baking spray and cut the refrigerated biscuits into quarters.
  2. Spread the biscuits pieces into the bottom of the baking pan.
  3. Sprinkle the browned sausage over the biscuit layer. Leave about 25% of it to sprinkle over the top later.
  4. Sprinkle about half of the cheese over the sausage.

  1. Add the eggs, milk and salt and pepper to a bowl.
  2. Whisk together the eggs and milk.

  1. Pour the egg mixture over the biscuits, sausage and cheese.  Sprinkle a little bit more cheese on the casserole.
  2. Place the casserole into an oven pre-heated to 350 and bake for 30 minutes.  Remove from the oven and add the remaining cheese and sausage to the top of the casserole.
  3. Place the biscuit casserole back in the oven for 10 more minutes or until the biscuits are fully cooked.

How to Serve and Store

The casserole should be served hot directly out of the oven.  Store any left-overs in the refrigerator and you can re-heat it in the microwave or toaster oven. You can also freeze a baked breakfast casserole for up to 2 months. Allow to defrost and then reheat in the oven until it is hot.
