We love Pumpkin desserts and we love Cream Cheese Frosting so we combined them together into one yummy Fall-tatstic Pumpkin Bar. The cookie layer is moist and delicious with the rich taste of Pumpkin Bread. And what can we say about our super popular Cream Cheese Frosting recipe? How about … it is to die for! And did we mention how easy this Pumpkin Bar with Cream Cheese Frosting is to make? So grab a can of Pumpkin puree and let’s get baking.

How to Make the Batter

Step 1: Add the eggs, oil, pumpkin, sugar, and vanilla to a mixing bowl.  Mix until well combined. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt and mix until combined. Add the dry ingredients into the wet ingredients and mix together just until combined.  Do not over mix.

Baking Instructions

Step 2: Spray or line a 9×13 pan. Pour the batter into the prepared pan and spread into an even layer.
Step 3: Bake for 30-35 mins in an oven preheated to 350 degrees. You will know when they are done if a toothpick inserted into the center of the pumpkin bar comes out clean.

Frosting the Pumpkin Bars

Step 4: While the Pumpkin Bars are cooling, make up a batch of our super creamy and delicious The Best Cream Cheese FrostingYou’ll find all the directions you’ll need right here
Step 5: When the bars are completely cooled, frost them with the Cream Cheese Frosting.  It will be easier to frost them if you do it while the bars are still in the pan.

Step 6: Cut into bars and serve. Easy Peasy. 

Serving/Storage Instructions

These Pumpkin Bars must be stored in the refrigerator because of the Cream Cheese Frosting. Cover the pan or store them in an airtight container and they should be good for at least a week.  We usually take them out of the refrigerator for about 20-30 minutes before serving them as the pumpkin bars taste the best at room temperature. You can also freeze the bars for up to 2 months.

Ingredients

  • 4 Large Eggs
  • 1 1/2 cups Brown Sugar (packed)
  • 1 cup Oil
  • 1 can Pumpkin Puree (15 oz)
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 tablespoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Ginger
  • 1 teaspoon Salt
  • 1 batch of our The Best Cream Cheese Frosting

Instructions
