Chock full of creamy Pistachio flavor, marshmallows, nuts and topped with Maraschino Cherries, this yummy Watergate Salad is the perfect side dish for a holiday meal, a family get-together, or a work potluck.

When is a salad not a salad but really a super yummy side dish that is actually a dessert? When it is Watergate Salad. Chock full of creamy Pistachio flavor, marshmallows, nuts and topped with Maraschino Cherries, this yummy treat was served at every holiday meal my Great-Grandmother ever cooked for us.  She used Dream Whip instead of Cool Whip, but other than that, this is her recipe handed down through the generations.  Some people might call it old-fashioned but we call it a classic and still make it to this day. Enjoy!

Ingredients You Will Need

All the ingredients you will need to make Watergate Salad including Crushed Pineapple, Mini Marshmallows, Cool Whip, Chopped Nuts, Pistachio Instant Pudding and Maraschino Cherries.

How to Make the Pistachio Fluff

Step 1: Pour the contents of the can of Crushed Pineapple (with the juices) into a mixing bowl and add the package of Pistachio Instant Pudding.
Step 2: Mix until combined.
Step 3: Add the container of Whipped Topping.
Step 4: Fold together until thoroughly combined.

Step 5: Add the marshmallows and mix.
Step 6: Add the chopped nuts (we like to use Pecans but Walnuts work nicely also) and mix.

Serving and Storage Instructions

Step 7:  Cover the bowl with plastic wrap and refrigerate overnight or for at least 2-3 hours so the flavors can meld together. Serve chilled with a sprinkle of nuts and topped with maraschino cherries.  If you are going full-out dessert, more of a Pistachio Fluff than a Watergate Salad you can add a dollop of whipped cream to the top along with the cherries.  Yum! Store in the refrigerator in an airtight container, the Watergate Salad should last 2-3 days.

  • 1 can Crushed Pineapple (20 oz.) (Drained)
  • 1 package Pistachio Instant Pudding
  • 1 container Cool Whip (8 oz.)
  • 1 cup Mini Marshmallows
  • 1/2 cup Chopped Nuts
  • 1 jar Maraschino Cherries

Instructions

  1. Pour the contents of the can of Crushed Pineapple (with the juices) into a mixing bowl and add the package of Pistachio Instant Pudding.
  2. Mix until combined.
  3. Add the container of Whipped Topping.
  4. Fold together until thoroughly combined.
  5. Add the marshmallows and mix.
