If you love Pistachios, you are gonna love these super easy-to-make Pistachio Cupcakes with Pistachio Whipped Cream Frosting. Light and airy with just a hint of Pistachio, these are a great recipe when you have to whip up a dessert at the last minute or need to bring something that looks fancy but isn’t to the office potluck! These yummy cupcakes are also super easy to make and the perfect treat for that Pistachio lover in your life!

How to Make the Pistachio Cupcakes

Steps 1 & 2: We used a White Cake Mix and Pistachio Pudding as the base for our Pistachio Cupcakes.  If you need some tips on how to make a cake mix taste more like homemade, check out our Working with Cake Mixes post. Add the Pistachio Pudding mix to the White Cake Mix and then make the batter according to the instructions on the back of the box.

Step 3: Fill your cupcake liners 3/4 full with the Pistachio Cupcakes batter.
Step 4: Bake the cupcakes in an oven preheated to 350 degrees for 18-20 minutes. Allow the cupcakes to cool before frosting them.

How to Make the Pistachio Whipped Cream Frosting

Step 5: Now make a batch of our amazing Pistachio Whipped Cream Frosting.  Light, airy, not too sweet, and flavored with Pistachio this is the perfect frosting for these cupcakes.  You will find detailed instructions on how to make the frosting here.

Putting It All Together

Step 6: Chop a few Pistachios for decoration.

Step 7: We used a decorating bag and a Wilton 2D Decorating Tip to swirl on the Pistachio Whipped Cream Frosting.  You can see a video on how to make this frosting swirl right here. Press the chopped Pistachios into the bottom of the frosting swirl.

Ingredients

  • White Cake Mix
  • Oil (use amount called for on the back of the cake mix)
  • Water (use amount called for on the back of the cake mix)
  • Eggs (use amount called for on the back of the cake mix)
  • 1 small box of Pistachio Pudding
  • 1/2 cup of Pistachios (chopped)
  • 1 batch of our Pistachio Whipped Cream Frosting

Instructions

  1. Make up a box of White Cake Mix according to the instructions at the box but add the box of Pistachio Pudding to the mix before you add the wet ingredients.
  2. Spoon cake mix into cupcake liners.
  3. Bake the cupcakes in a 350 degree oven for 18-20 minutes.
  4. Make a batch of our Pistachio Whipped Cream Frosting
  5. Add a swirl of the frosting to the cupcakes using a Wilton 2D Decorating Tip.
  6. Add a circle of chopped Pistachios around the frosting swirl.
