Our Easy Homemade Strawberry Shortcake is made with sweet buttermilk biscuits filled with fresh strawberries and homemade whipped cream. This is a classic dessert for a reason. So fresh and delicious!

As the weather starts warming up, we start craving Strawberry Shortcake. When we were kids, this was one of our mom’s go-to family desserts. There are so many ways to make it, with pound cake, with angel food cake, with those cake-adjacent store-bought sponge cakes but our favorite is Strawberry Shortcake with Homemade Sweet Biscuits. Here is our classic version of this vintage strawberry recipe. We hope you enjoy it as much as our family does.

Ingredients you will need

  • Strawberries: Fresh Strawberries are a must.
  • Whipped Cream: You can use canned whipped cream or Cool Whip but we think Homemade Strawberry Shortcake calls for Homemade Whipped Cream.
  • Flour: We use All-Purpose Flour for the Sweet Biscuits.
  • Butter: Sweet Cream Salted butter that is super cold!
  • Buttermilk: Our Sweet Biscuits call for Buttermilk but if you don’t have any, you can use regular milk with a tablespoon of white vinegar or lemon added to it.
  • Egg: Large, room temperature egg.
  • Sugars: Granulated Sugar and Coarse Sugar.  You will use the Granulated Sugar to sweeten both the strawberries and the biscuits. And the coarse or sanding sugar to sprinkle on top of the biscuits.
  • Baking Powder: to help the biscuits rise.
  • Baking Soda: to help create a soft biscuit with a little bit of rise.
  • Cream of Tartar: to help the biscuits rise.
  • Salt: for flavor.

How to Prepare the Fresh Strawberries

  1. Soak the strawberries in Vinegar Water (use 3 parts Water/1 part White Vinegar) to clean them.
  2. Rinse and dry the strawberries.
  3. Slice the strawberries and add to a bowl.
  4. Sprinkle the sliced strawberries with sugar to taste (usually 1/4 cup sugar) depending on how sweet you want the Strawberries to be.
  5. Stir the sliced strawberries and sugar until they are coated with sugar.
  6. Cover the bowl with plastic wrap and store in the refrigerator (approximately one hour) so they can macerate and get good and juicy.

How to Make Sweet Biscuits

  1. Add Flour, Sugar, Baking Powder, Baking Soda, Cream of Tartar and Salt to a mixing bowl. Mix with a spoon or fork until combined.
  2. Add very cold cubed butter to the flour mixture. Using a pastry cutter or your hands, mix the butter into the flour until it is fully combined.
  3. Whisk an egg and the buttermilk until egg is mixed.
  4. Add the buttermilk/egg mixture to the flour. Stir with a spoon only until combined.  Do not over mix!

  1. Pour the dough out onto a lightly floured countertop.  There will still be some unmixed flour mixture in the bowl, pour that out too.  Gently knead 5-6 times until the dough forms a ball. Do not over knead.
  2. Separate the dough into six equal portions and place on a prepared baking sheet. (We use a piece of parchment paper.)
  3. Brush the dough with Buttermilk and sprinkle with Coarse Sugar.
  4. Bake in a pre-heated 425 degree oven for 12-13 minutes or until golden brown on the top.

How to Assemble the Strawberry Shortcake

  1. Gather your sliced strawberries, whipped cream and sweet biscuits.
  2. Cut a biscuit in half.
  3. Add a layer of strawberries to the biscuit.
  4. Add a layer of whipped cream.
  5. Add the second half of the biscuit.
  6. Add a dollop of whipped cream on the top.

  • 2 cups All-Purpose Flour
  • 1/2 cup Granulated Sugar

  • 1/4 teaspoon Baking Soda
  • 1/2 teaspoon Cream of Tartar
  • 1/4 teaspoon Salt
  • 1/2 cup Butter (Cold, Cubed Sweet Cream Salted)
  • 3/4 cup Buttermilk
  • 1 large Egg
