Our Carrot Cake Bars are chocked full of carrots and cinnamon and topped with our delicious cream cheese frosting. (And tastes just like Carrot Cake!)

Our Carrot Cake Cookies have quickly become one of our most popular recipes. Laurie thinks it is because of the just-right combination of carrots and cinnamon.  I think it is the addition of our delicious cream cheese frosting. Whatever the reason these cookies have ricocheted up the list of our most shared recipes.  We didn’t think a yummy dessert recipe like that should just be in cookie form so we went into the Two Sisters test kitchen and came out with a new version … our Carrot Cake Bars.  Same great taste in a all new dessert.  We hope your friends and family like this version as much as we do!

Dough for the Carrot Cake Bars

In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Mix in cinnamon, baking powder, baking soda and salt and mix well. Add flour and mix until combined.

Chop Carrots for Carrot Cake Bars

Grate and chop 2 cups of carrots.  We used a bag of pre-chopped carrots but we did another chop on them before we used them.

Add Carrots to the Carrot Cake Bars

Mix in the chopped carrots.

Pour dough into a prepared Cookie Sheet

Pour the dough out onto a cookie sheet covered with a piece of parchment paper.

Use Parchment Paper to press down the dough

Using a second piece of parchment paper, press down the Carrot Cake Bar dough.

Carrot Cake Bars just out of the oven

Bake the cookies in a 375 degree oven for 13-15 minutes or until golden brown around the edges.   Here is what the cookie bar looks like just out of the oven.  Golden brown and delicious and chock full of sweet delicious carrots.

Candy Melt Carrots decoration

We used green and orange Wilton Candy Melts to make a quick and easy carrot decoration for our Carrot Cake Bars.  Melt the candy melts in a plastic bag in the microwave. Cut off a tiny corner of the plastic bag and create these squiggly carrots on a piece of parchment paper.  Easy peasy.

Frost the Carrot Cake Bars with our Best Cream Cheese Frosting using a spreader or a knife.  Add a candy carrot on top of the frosting and that ‘s all there is to it!  You now have a yummy frosted cookie bar that tastes just like a piece of Carrot Cake.

Ingredients

  • 1 cup Butter (Sweet Cream Salted)
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 3 cups All-Purpose Flour
  • 4 teaspoons Cinnamon
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 cups grated or chopped raw Carrots
  • The Best Cream Cheese Frosting
  • Wilton Candy Melts - Orange and Green

Instructions

  1. Grate and chop 2 cups Raw Carrots
  2. In a large bowl, cream butter and sugars until light and fluffy.
  3. Beat in eggs and vanilla.
  4. Mix in cinnamon, baking powder, baking soda and salt and mix well.
  5. Add flour and mix until combined.
  6. Add in 2 cups of carrots.
  7. Press the dough down into a cookie sheet covered with parchment paper.
  8. Bake the cookie bars in a 375 degree oven for 13-15 minutes or until golden brown around the edges.
  9. Allow cookie bars to cool.
  10. Frost with The Best Cream Cheese Frosting.
  11. Create a candy carrot made out of green and orange Wilton Candy Melts and place it on the top of the bar for decoration. (optional)
